Butternut Squash Soup - 2 Ways!

The weather is really starting to get colder, we have had our first major frost of the season. I am not too excited about that, winter is not my favorite season. According to the Farmer's Almanac our area should be getting a lot of snow this winter, yuck! I like the easy days of summer when going outside does not take an hour to prepare for with all the gear needed for the cold and snow!

Well since the winter and cold is coming, I am sharing my butternut squash soup recipe. In the recipe description, I have options for the Instant Pot or stove top. Both turn out great and are easy. You don't have to use only butternut squash, any similar type of squash will be great - such as Delicata, Acorn, or Buttercup. This soup is very filling and is great served with a crusty loaf of bread and a green salad. My boys really like it and I usually have to double the recipe so we have a little extra for leftovers, because it is great reheated too!
